Chef Profile: Hugo Campos

Hugo Campos is the head chef at our Bar Adagio in downtown San Francisco.  Although his family was originally from El Salvador; Hugo grew up in Southern California.  It was there, well to be more specific…in the kitchen of a diner in Riverside while working as a dishwasher that his love for the culinary world began.  When asked about his particular culinary influences; Hugo is quick to state that he doesn’t look up to the typical celebrity or high-profile chef.  The biggest influences on his culinary career have always been a number of sous chefs that he’s worked with since that job as a dishwasher right out of High School.

Hugo’s down to earth personality and focus on the virtues of the simple, quality things in life definitely come through in his food and menu selections. Bar Adagio features classis comfort food like Roasted Range Chicken in a honey-mustard crust and pretzels served with a house-made cheddar-beer dip (two of his favorites).  His dessert selections (and this author’s favorite’s) range from a baked apple cobbler with a rum spiced crumble and hazelnut ice cream to a root beer float with a candied cherry on top.  Hugo also opened up about his musical influences sighting that both his parents had such wide-ranging  tastes that his current musical likes are all over the board.  From Al Green to the Talking Heads; Hugo digs it all.     My favorite music to listen to while cooking is Andrea Bocelli. I find his music very relaxing and inspiring at the same time. It allows me to become very creative with food.

    My favorite music to listen to while cooking is a compilation CD with Temper Trap, Vampire Weekend and Passion Pit. I like to mix it up! (pardon the pun!)
